Historically, wagyu farmers’ breeding objectives are driven by the marbling score, aka the fat content that puts you into a dizzy spell just by looking at your steak, leaving the actual taste of the steak secondary. In contrast, the farmers we work with are pioneering the wagyu world by balancing the lean meat with the fat and focusing on increasing the ‘umami’ in their beef. You have not tasted something as exquisite as our wagyu beef from Toriyama Umami Wagyu.
